The Unplanned Muffin

Last Friday night I spent the evening at home alone. I really love doing that sometimes, it helps me to really appreciate how peaceful our little flat can be and it feels very self indulgent. I cooked spaghetti and watched Robin Hood, the Disney version, for the first time. I know, I don't know how I made it so far in life without ever having seen it.

After dinner I really wanted something sweet, and as we didn't have anything I decided to bake some apple muffins with some left over apples that have been sitting around for a while. I googled a quick muffin recipe, adapted it for what I had available, and I had six delicious unplanned muffins all to myself. Of course I didn't eat them all, but believe me I gave it my best shot.

Here's my version of the recipe:

Preheat the oven to 200C

mix together

1 and 1/2 cups of flour

3/4 cup of brown sugar

1/2 teaspoon of salt

2teaspoons of baking bowder

1 teaspoon of pumpkin pie spice

1/3 cup of vegetable oil

1 egg

1/3 cup of milk

2 apples, peeled, cored and chopped into about 1/2 inch pieces.

spoon into six muffin cups, I used liners but if you don't have any don't forget to grease the cups with butter first.

In another bowl mix together the crumble topping

1/2 cup of brown sugar

1/3 cup of flour

1/2 cup of room temperature butter

1 and 1/2 teaspoons of pumpkin spice.

Spoon the  topping onto the unbaked muffins squashing it all down on top a bit, to create a bit of a loose fitting hat.

Bake the lot for 20 minutes then do the tooth-pick test to make sure they're done.
